Ingredients
2 Eggs
200g Sugar (I use caster sugar but you could use demerara sugar if you wanted the brownies to be extra decadent)
200g Chocolate (milk, dark, white, 70%… whatever you want)
9 (yes, 9) packs of Reese's Peanut Butter Cups, quartered
50g salted Butter
50g Plain Flour (this can be subbed for gluten free flour and they still turn out bloody amazing)
2 tbsp of crunchy Peanut Butter (smooth would work too)
3tbsp Cocoa Powder
Makes 24 (or 12 bigger brownies, or 6 huge ones, or 4 massive ones, 2 gigantic ones or 1 incredible night in with a weepy film)
1. Grease a baking tray (at least 30cmx20cm and at least 2cm deep). Generally I grease with frylight, line with greaseproof paper along the bottom and then spray again. Preheat your oven to 160ºC. Whisk together the eggs and the sugar until light and fluffy.
3. Pour the chocolate mix with the eggs and sugar and give it a good beating. Add in the flour and cocoa powder and mix the batter until it's all well incorporated.
4. Pour the batter into the tin and plonk it in the oven. Here is where it gets a little bit tricky. These brownies can take from 30+mins to cook. The key is to keep your eyes on them and to check their wobble every now and again. You're looking for a Beyonce's bum, firm-wobble and not a Christina Aguilera's boobs, womanly-wobble which will probably take about 20mins to achieve. At this point take the brownie out of the oven and stud the top with the rest of the peanut butter cup quarters and then return to the oven for another 5-10mins.
5. Take out of the oven, cool and devour. Enjoy!
If you want to you can take out all the peanut buttery ingredients and use mint chocolate or orange chocolate if you like and they are still lush. These brownies are particulary yumsome if you use chocolate with caramel in on the top, it is totally gooogasmic!
